Our kids love chickpeas! This is a great and simple recipe that can be used for any occasion. Add these chickpeas to a salad, a side dish or enjoy just as a snack. If feeling frisky, use these roasted chickpeas for any hummus recipe to add a nice pop of spice flavor!
Ingredients
- 1 16 oz can chickpeas (or larger for more)
- 1 tablespoon olive oil
- 1 tablespoon Rattler Rub
- 1 half lemon, deseeded (optional)
Directions
Preheat the oven to 425 degrees. Drain can of chickpeas and rinse well under water. Lay chickpeas on a paper towel and let dry completely. Once dry, toss chickpeas with olive oil and Rattler Rub. Line a flat baking sheet with parchment paper and spread the seasoned chickpeas across the sheet. Once to temperature, place the baking sheet in the oven to roast. At around 10 minutes, use a spatula to gently toss the chickpeas in order to cook evenly. Continue roasting for another 10 minutes or until the chickpeas reach desired crispiness. Remove from the oven and toss with the juice of half a lemon. Let rest for 5 minutes before serving.
